Sweet Orange Glazed Salmon with Basmati Rice and Vegetables
Ingredients:
SALMON
3-4 4 Salmon Fillets about 5-6 ounces each
Salt & Pepper to taste
Olive Oil (drizzle to coat the pan)
ORANGE GLAZE
1-2 tbs Orange Zest
3/4 Cup Fresh Squeezed Orange Juice from about 2 Large Oranges
1/4 Cup or 4 tbs Honey
3-4 tbs Soy Sauce (more or less to taste)
3 Cloves Garlic Mashed or Minced
1 tsp corn starch mixed with one tablespoon of water for thickening (Optional)
RICE
Basmati Rice (package instructions based on serving size)
2 tbs butter
salt to taste
Vegetables
1/2 bag of broccoli florets (you can use the whole bag)
1 Large Zucchini
Olive Oil (enough to coat the pan)
Water (about 1-2 oz)
Salt and pepper to taste

1. Step 1 - Rice
Add rice and cook the rice based off package instructions
2. Step 2 - Vegetables
Slice the Zucchini
Heat olive oil in a pan
Add Zucchini and Broccoli to pan with a little water
Cover and cook on medium heat until desired doneness. (make sure to stir throughout so the veggies don't stick to the bottom of the pan)
3. Step 3 - Salmon
Preheat oven to 425 degrees Fahrenheit
Season salmon with salt and pepper
Sear the Salmon- heat the olive oil in an oven safe skillet over med-high heat skin side up. Sear for 4-5 mins or until salmon is golden brown (make sure the pan is hot before adding salmon). Flip and sear the other side for about 3 mins. Set aside to add glaze.
4. Step 4 - Orange Glaze
In a small sauce pan, combine all the orange glaze ingredients.
Bring the mixture to a simmer over medium heat.
Reduce the heat and let it simmer, continually stirring until the glaze thickens to your desired consistency. (Note: if you like a thicker glaze, add the cornstarch mixture and mix until it thickens further)
5. Step 5 - Glaze and Bake the Salmon
Pour the Orange Glaze over the seared salmon fillets
Transfer the Skillet to the preheated oven
Bake the Salmon for 10-15 mins until it is cooked through and flaky (the internal temperature of cooked salmon should be 145 degrees Fahrenheit)

Don't overcook the salmon
Allow the salmon to rest for a few mins before serving
